I usually snack a little in the morning at work, whatever I have on my desk or can scavenge from the office. Crackers, nuts, popcorn, half a grapefruit, a break room donut, etc. Lunch is usually leftovers, more spinach/kale, a piece of fruit, sometimes granola and yogurt, and dark chocolate. A hummus wrap, bean and cheese burrito or sticky rice with egg and veggies if I don't have leftovers. Around 3 pm I force myself to have another snack if I'm running that evening or I get too hungry on the run. Usually the same as the morning snack, or something from the vending machine if my desk lacks snacks. I cook more complex meals for dinner on approximately alternating nights, usually pasta, Thai curries, stir fry, or soup with beans, tofu, or egg for protein. I cover my plate or fill my bowl with spinach/kale and then put the rest of the meal on top. On low-effort nights I've been doing a lot of hummus and veggie burger wraps with salad or steam frozen veggies lately.
